CLOUD CAKE (FROM SCRATCH)
This cake is perfect for birthday parties!

2 cups sugar
4 eggs
1 cup milk
2 cups self-rising flour
1/2 cup (1 stick) butter
1 tsp. vanilla
1 cup prepared icing (tinted with food coloring)
1/4 cup prepared white icing
9-inch round baking pan
large mixing bowl

Preheat oven to 350°F. Grease a 9-inch round cake pan.

Mix sugar, eggs and flour in a large bowl. Melt butter in a microwave then slowly stir in the milk. Add this to the mixture. Pour mixture into prepared cake pan.

Bake at 350°F for 35 to 40 minutes or until the cake looks done (I do the butter knife test).

Cover the cake with Saran or plastic wrap and leave it in the refrigerator overnight to chill.

Frost the cake with whatever icing color you want (I use blue). Use white icing to decorate it however you want (clouds).

Since microwave ovens vary in power, you may need to adjust your cooking time.

This cake is fluffy, moist, and the perfect canvas for all sorts of creative decorating. My kiddos loved helping me pipe on those little white icing clouds - talk about happy campers! This recipe is a keeper!
