SHRIMP IN LEMON BUTTER SAUCE 
2 lbs. shrimp, peeled
1/4 c. olive oil
1/4 c. butter
3 tbsp. lemon juice
4 cloves garlic, mashed or pressed

Sprinkle shrimp with salt and pepper. Dust lightly with flour. Combine all ingredients. Turn and toss to evenly coat shrimp. Broil 6 inches from heat until shrimp turns pink, about 8 minutes, turning twice during broiling. Remove shrimp from oven and sprinkle with garlic crumbs (see recipe below). Broil for 1 more minute until top is golden.

GARLIC CRUMBS:

1/4 c. mashed Ritz crackers or Kellogg's Corn Flake Crumbs
1/4 c. grated Parmesan
1 tbsp. minced parsley
1 clove garlic, pressed
2 tbsp. melted butter

Combine and toss.
