CHOCOLATE TOFFEE COOKIE CRUNCH
BARS
 
2 c. finely crushed vanilla wafers (50 wafers)
1/4 c. firmly packed brown sugar
1/3 c. butter, melted

TOFFEE LAYER:

1/2 c. butter
1/2 c. firmly packed brown sugar
1 (6 oz.) pkg. (1 c.) Nestle Toll House semi-sweet chocolate morsels
1/2 c. finely chopped nuts

Cookie Base: Preheat oven to 350. In bowl combine wafer crumbs and brown sugar. Stir in butter. Press into 13x9 pan. Bake at 350 for 8 minutes.

Toffee Layer: Combine butter and brown sugar. Cook over moderate heat stirring constantly, until mixture comes to a boil. BOIL 1 MINUTE. Pour immediately over baked base. Bake at 350 for 10 minutes.

Let stand 2 minutes. Sprinkle chocolate chips on top. Let stand 2-3 minutes until morsels are shiny and soft. Spread evenly. Sprinkle with chopped nuts. Chill. Cut into 2x1 inch bars or break into irregular pieces. Makes 4 1/2 dozen bars.

Made this today and was sadly disappointed with the cookie base. It totally fell apart when I tried to cut the bars and it would no doubt be a mess if you actually tried to break into irregular pieces. The upper 2 layers are fantastic so, next time, I will either use more butter for the cookie base or reduce amount of wafers to an amount that will only cover the bottom of the pan and keep the toffee from sticking to bottom.

Best recipe of all time. Suggest subbing half the Nilla wafers for Cheeze-its, and you've got yourself what we call in my family: Christmas Crack.
