MORNING GLORY MUFFINS | |
1/2 c. raisins, soaked in hot water 2 c. flour 1 c. sugar 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 1/2 c. oat bran (optional) 2 c. carrots, grated 1 lg. tart apple, peeled and coarsely grated 1/2 c. flaked coconut 1/2 c. sliced almonds 3 eggs 1/2 c. oil 2 tsp. vanilla Combine flour, sugar, soda, cinnamon, salt and oat bran in a large bowl. Stir in raisins, carrots, apple, almonds and coconut. Beat eggs with oil and vanilla. Stir into dry ingredients with a spoon. Bake at 350 degrees for 20 to 22 minutes (18 minutes for mini muffins). Cool 5 minutes. Remove from pans. Serve at room temperature. Yield: 4 dozen mini or 18 large muffins. |
