STEAMED RICE PUDDING 
4 c. milk
1/4 c. sugar
1/4 c. rice
1/4 tsp. salt & nutmeg
Couple dashes of cinnamon
1/3 c. raisins

Combine all ingredients. Cook in top of double boiler until cooked and thick like pudding. Watch that water does not evaporate from bottom of double boiler. More or less of nutmeg or cinnamon can be used. Serve warm or cold with any topping of your choice. Whipped cream, peaches, etc. Great just plain. Takes about 2 to 2 1/2 hours.
