STEAMED SUET PUDDING 
1 c. brown sugar
3/4 c. ground suet
1 egg, beaten
1/2 c. milk
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
1/2 c. coarsely chopped walnuts
1 c. raisins, cooked, cooled and drained

Mix together brown sugar and suet; stir in egg and milk. Sift dry ingredients together and add, stirring until blended. Fold in nuts and raisins. Spoon into well greased steamer pan or pudding mold. Place in steamer. Lay waxed paper loosely over mold to prevent steam (which collects on cover) from dropping into pudding. Steam over simmering water for three hours. Remove pudding from steamer.

This recipe brings back memories! My grandmother use to make this when I was little (1940's). She put her pudding in buttered tin cans to steam. It was delicious! I've never made it. Thanks for the memories!

In Canada, my Mom prepared this pudding every year and served it with a butterscotch sauce (delicious)... it also involved adding finely shredded carrot and potato, and dates, raisins and candied fruit. Very rich & delicious!

This recipe is NOT a traditional British suet pudding. This recipe is a Christmas Pudding which is NOT the same as a proper suet pudding. Traditional suet puddings had no fruit or spices in them. They were made with suet, eggs, flour and caster sugar. Once cooked they were served with Jam (jelly in the USA) or treacle (Golden Syrup) and custard. They were very filling but very cheap to make.
