CHICKEN FAJITAS (FA HEE TAS) 
1 chicken breast per person
1-2 tbsp. oil
1-2 cloves garlic, crushed
2 onions, sliced (optional)
2 green peppers, sliced (optional)
1/2 to 1 tsp. bottled Liquid Smoke
1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. lime juice
Flour tortillas
Shredded Cheddar cheese
Lettuce
Sour cream
Guacamole
Pico de gallo

Cut chicken into strips and marinate in lime juice while slicing vegetables. Heat oil and saute garlic, add onion rings and green peppers, saute. Remove from skillet, add more oil, then chicken, liquid smoke, salt and pepper. Saute until chicken is white (just a few minutes). Add vegetables to reheat.

Warm tortillas and fix fajitas like tacos with the other ingredients. Guacamole and Pico de Gallo recipes are below. One chicken breast usually makes 3 fajitas and this is filling for the normal appetite.

GUACAMOLE:

1 or 2 ripe avocados
1/2 tsp. lime juice
1 tsp. cilantro (coriander)
1-2 tomatoes, chopped

Peel and mash avocados and add other ingredients.

PICO DE GALLO:

1 or 2 tomatoes
1/2 to 1 bunch green onions
1 jalapeno pepper

Coarsely chop all ingredients and mix together. If you like a hot salsa, leave the seeds from the jalapeno pepper in the salsa.
