AUNT BILL'S BROWN CANDY | |
6 c. sugar 2 c. milk or cream 1/2 tsp. baking soda 1 tsp. vanilla 2 lbs. pecans 1 stick butter Caramelize 2 cups sugar until light brown. While caramelizing sugar, pour remaining 4 cups sugar and milk into heavy stewer and stir and cook on low heat. Pour carameled sugar into boiling mixture in small stream and continue cooking and stirring until mixture forms firm ball when dropped into cold water. Immediately add soda and stir vigorously as it foams up. Add butter and beat until butter is melted. Add vanilla and beat until mixture is thick and heavy. Add nuts and pour into buttered 9"x13" pan. Makes 6 pounds. |
