BAKED CREAMED SPINACH 
2 tbsp. butter
1 sm. onion, chopped fine
2 tbsp. flour
1 tsp. salt
1 c. milk
2 eggs
2 (10 oz.) bags spinach, finely chopped, cooked, and well drained

Grease 8 x 8 inch baking dish. In 2 quart saucepan over medium heat in hot butter, cook onion until tender (about 5 minutes). Stir in flour and salt until blended. Gradually stir in milk; cook, stirring, until sauce boils and thickens slightly. Preheat oven to 350 degrees. In small bowl, beat egg yolks with a fork. Stir in a small amount of hot sauce; stir fast to avoid lumps. Cook, stirring constantly, until thick. Do not boil. Remove from heat and stir in the spinach. In small bowl, with mixer at high speed, beat egg whites until stiff peaks form. With wire whip, gently fold in egg whites into spinach. Pour into baking dish. Bake 20 to 25 minutes until knife comes out clean.
