CHEESY CREAM OF SPINACH SOUP 
3 tbsp. butter
1 tbsp. oil
1 sm. onion, minced
1 to 2 (10 oz.) pkgs. frozen chopped spinach, thawed
2 tbsp. flour
1 (14 1/2 oz.) chicken broth
2 c. half & half
1/2 tsp. pepper
1/2 tsp. nutmeg
1/2 lb. bacon, chopped & cooked

Melt oil and butter in large saucepan over medium heat. Add onion. Cook 5 minutes, drain spinach, keep liquid. Add spinach to onion and mix. Sprinkle with flour and cook and stir 3 minutes. Blend in broth and spinach liquid and simmer 10 minutes. Stir in half & half and spices. Simmer 5 minutes. Add bacon and cheese. Serve hot.
