CHEESY HASH - SPINACH PIE 
Pastry for a single-crust pie
2 (10 oz.) pkg. frozen chopped spinach
2 eggs, beaten
1 can condensed cream of mushroom soup
1/4 c. flour
1 tbsp. prepared horseradish
1 tsp. prepared mustard
1 (15 oz.) can corned beef hash
1 c. shredded American cheese
2 tbsp. chopped pimento

Prepare pastry for a single crust pie. Prick bottom and sides well with fork. Bake at 450 degrees for 10-12 minutes. Remove from oven and reduce temperature to 350 degrees.

Cook spinach according to package EXCEPT omit salt. Drain well, pressing out excess water. Combine eggs, mushroom soup, flour, horseradish and mustard; stir in drained spinach.

Spread hash in baked pastry shell; spoon spinach mixture over. Bake, uncovered for 45 minutes. Combine cheese and pimento; sprinkle over pie. Bake additional 2-3 minutes. Let stand before serving.

This cheesy hash and spinach pie is absolutely yummy and since I usually have crusts in the freezer it is very quick too. The flavors go amazingly well together. I never have the frozen chopped spinach so I substitute 2 cans of spinach and press it in a mesh strainer to get all the liquid out.

One of our favorite recipes! Savory, cheesy, and comforting. We keep canned spinach in the cupboard for this and substitute 1 can of spinach, well drained, for the fresh when we need to.
