1 1/2 c. graham cracker crumbs (16 to 18 whole crackers)
3 tbsp. melted butter
Mix above and add: 1/2 to 2/3 c. brown sugar 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1 tsp. grated lemon rind 1 tsp. vanilla 1 to 2 tbsp. lemon juice (depending upon tartness of apples) 1 to 2 tbsp. water (depending up juiciness of apples)
Mix all together and spoon into Pam sprayed glass baking dish. Cover and bake at 350 degrees about 30 to 40 minutes. Uncover and bake about 15 minutes longer or until apples are tender. Serve with vanilla flavored low-fat yogurt, ice milk (softened), or low-fat vanilla custard topping.
