HEARTY BEAN AND SAUSAGE
CASSEROLE
 
3/4 lb. sweet Italian sausage, sliced
1 (19 oz.) can Progresso red or white kidney beans, drained
1 (19 oz.) can full strength Progresso lentil soup
1/4 c. Progresso Italian style bread crumbs
1 med. tomato, cut into wedges
3 tbsp. Progresso grated Parmesan cheese

Preheat oven to 400 degrees. Place sausage in a 1 1/2 quart casserole. Brown in oven, about 15 minutes. Drain off drippings. Reduce oven temperature to 350 degrees. In a medium bowl combine red or white kidney beans, lentil soup and bread crumbs; add sausage; mix well. Return to casserole. Bake, uncovered, until hot, about 30 minutes. Arrange tomato wedges around outside edge of casserole. Sprinkle with Parmesan cheese. Bake until cheese is melted, about 5 minutes. Yields 4-6 portions.
