POT PIE - TURKEY, CHICKEN OR
BEEF
 
2/3 c. butter
2/3 c. onion, chopped
1/2 tsp. pepper
3 1/2 c. chicken broth (can use bouillon cubes, chicken or beef)
3 1/2 to 4 c. chicken, beef or turkey, cut into bite-size pieces
1 (20 oz.) pkgs. peas & carrots, frozen
Pie crust (your own favorite or frozen)
2/3 c. flour
1 tsp. salt
1 1/3 c. milk

Heat butter over low heat until melted. Blend in flour, onion, salt and pepper. Cook over low heat, stirring constantly until mixture is smooth and bubbly. Remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir for 1 minute. Stir in meat and frozen vegetables. Pour into prepared double crust pie shell and bake at 425 degrees for 30 to 35 minutes. Makes 3 to 4 pies.

This recipe is so good, and easy. I did add a bit more salt and pepper than stated and about 4 gloves of garlic. I did not make 3-4 pie like the recipe states, but I put all the ingredient in one large cast iron skillet and make one large pie. If you do that, make enough of your home made pie crust for 2 pies. One pie crust works but makes a very thin crust, My family prefers a thicker crust. I will be making this again.
