CHICKEN BAKED IN TOMATO SAUCE 
5 lb. chicken
2/3 c. uncooked rice
3 cloves garlic, chopped
1 c. chopped onion
2 tbsp. butter
1 qt. canned tomatoes
2 to 3 tsp. chili powder
2 tsp. salt
Pepper to taste

Cut chicken in serving pieces and arrange in 3 quart casserole. Lightly brwon rice, garlic, and onion in butter over low heat, stirring constantly. Add tomatoes and seasoning. Pour over chicken, cover and bake in 350 degrees oven until chicken is tender.

Super easy, shockingly good!! Used less chicken (what we had on hand) but kept all other measurements the same, turned out fantastic. This is going in the permanent rotation. *cooked covered for approx. 35 min, both the chicken and rice were tender by that time

Great but if using brown rice, bake at least an hour. Chicken will be done, but check rice.
