CREAMY RICE PUDDING 
1 1/4 c. Carolina Rice
1 c. water
4 tbsp. butter
2 qts. milk
3/4 c. sugar
1 tsp. vanilla
1/2 qt. milk or 1 c. heavy cream & 1 c. milk
3 eggs
1/2 c. sugar
1 tsp. vanilla
Cinnamon

In a 4 quart saucepan, combine rice, water and butter. Stir and cook until all water is absorbed. Then add 2 quarts of milk, 3/4 cup sugar and 1 teaspoon vanilla. Bring to a boil; lower heat to simmer, stirring occasionally. Cook for 45 minutes or until creamy. Add 1/2 quart milk (or cream and milk combination). Stir and cook for 5 minutes. Beat together eggs, sugar and vanilla. Stir into rice mixture and cook 5 minutes more. Remove from heat; pour into serving dish and let set. When cool, refrigerate. Do not cover. Before serving, sprinkle with cinnamon.
