TOMATO MACARONI SOUP 
1/2 tbsp. butter
1/2 onion, chopped
2 carrots, chopped
1 stalk celery, sliced
1 can beef broth
1 sm. can tomatoes, cut up
Oregano
Basil
Parsley
1 c. cooked macaroni
1/2 c. sliced pepperoni

In saucepan, melt butter and saute vegetables 5-10 minutes. Add broth, tomatoes, and herbs. Bring to a boil; reduce heat and simmer 10 minutes. Add macaroni and pepperoni and heat through. Sprinkle with grated cheese if desired. Serve with corn bread, biscuits, or popovers.
