“NANNY'S MACARONI AND TOMATO” IS IN:

NANNY'S MACARONI AND TOMATO 
1 package large elbow or seashell pasta
1-2 cans of Campbell’s tomato soup
1-2 cans Hunt's petite diced tomatoes w/celery, bell pepper and onion or stewed tomatoes
1 medium to large onion, diced
1 bell pepper, diced
5-6 tablespoons of meat or bacon drippings
seasoning (salt, pepper, garlic powder and onion powder)

Cook pasta per instructions on package and drain. Set aside. In a skillet, sauté the onion and bell pepper in 2-3 tablespoons of meat or bacon drippings until soft.

Combine sauté vegetables, pasta, tomato soup and canned tomatoes in large sauce pan. Add seasoning to taste and additional meat drippings,

Simmer on low heat until liquid thickens. Stir to keep pasta from sticking and burning. You may need to add small amount of water or additional can of soup (especially if you used 2 cans of tomatoes).

My grandmother used to make this dish and to me there is no better example of comfort food. You may be tempted to leave out the meat or bacon drippings but it really is an intricate part of that homemade Southern comfort food.
