CHICKEN A LA MARIA 
1/4 c. Italian-seasoned fine dry bread crumbs
1/4 c. grated Parmesan cheese
6 whole lg. chicken breasts, skinned, split lengthwise and boned
1/2 c. sliced green onion
2 tbsp. butter
2 tbsp. all-purpose flour
1 c. milk
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
1 (4 oz.) pkg. boiled ham slices, diced

Combine bread crumbs and cheese; dip chicken breast halves in crumb mixture to coat lightly. Arrange in 9x13x2 inch baking dish. Set remaining crumb mix aside.

In saucepan, cook onion in butter until tender. Blend in flour; stir in milk all at once. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Stir in spinach and ham. Spoon spinach mix over chicken; sprinkle with the remaining crumb mixture. Bake, uncovered, in 350 degree oven for 40-45 minutes or until done. Makes 12 servings.
