COUNTRY STYLE CHICKEN KIEV | |
2 whole chicken breasts, halved 1/2 c. fine, dry bread crumbs 2 tbsp. grated Parmesan cheese 1 tsp. dried basil 1 tsp. oregano 1/2 tsp. garlic salt 1/4 tsp. salt 2/3 c. butter, melted 1/4 c. white wine or apple juice 1/4 c. chopped green onion 1/4 c. chopped fresh parsley Dip chicken breasts in melted butter; reserve remaining butter. Mix bread crumbs, cheese, and spices together. Roll breasts in crumb mixture. Place chicken breasts skin side up in 9 inch square baking dish. Bake at 350 degrees for 50-60 minutes. Meanwhile, add reserved butter and remaining ingredients. When chicken is golden brown, pour last ingredients over chicken. Continue baking 3-5 more minutes until sauce is heated through. Serve with sauce spooned over. This is an easy to do-ahead dish. I use skinless breasts and serve with wild rice. Serves 4. |
