APPLE BREAD 
1 c. oil
3 eggs, room temp.
2 c. sugar

Mix oil, eggs and sugar together well. Batter will be thick.

3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon

Combine flour, soda, salt and cinnamon first. Then add to the above mix and incorporate well.

1 tsp. vanilla
1 c. nuts
3 c. chopped apples

Finally add the vanilla, mix; add the apples and nuts and mix well (by hand).

Grease two bread/loaf pans (I only use glass). Divide above batter in the two pans. Bake 300 degrees for 1 1/2 hours. Breads will have a hard crust when done. These freeze well.
