APPLE BREAD 
1/2 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla
2 tbsp. yogurt, buttermilk or sour cream
2 c. apples, peeled and chopped
2 c. flour
1/2 tsp. salt
3/4 c. nuts, chopped
2/3 c. raisins
1 tsp. baking soda
Topping (see below)

Cream butter with sugar until light and fluffy. Stir in remaining ingredients, mixing until thoroughly blended. Grease and flour one 9x5 inch loaf pan or two 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.

Pour the batter into pan (s). Sprinkle topping over batter.

Bake in a preheated 350°F oven for 70 minutes for one large loaf, or 60 minutes for 2 smaller loaves. Refrigerate before slicing. This bread may be wrapped tightly and frozen for up to 4 months.

Topping:

2 tbsp. butter, melted
2 tbsp. flour
1 tsp. cinnamon
2 tbsp. sugar

Mix all ingredients until crumbly.

I didn't have any plain yogurt so added a flavored one. Worked fine. I would reduce the sugar by a 1/4 cup. Good.

I had to compromise a little. I used orange whipped yogurt, sprinkled some cinnamon in the batter, used 1/2 butter and 1/2 margarine. I did not have enough raisins, so only used 1/2 cup. I did not use nuts. I chose not to do the topping. Also, it was done baking in 45 minutes. I used 1 large loaf pan. It is delicious. I will make this again and again.
