STIR FRIED CHICKEN AND
VEGETABLES WITH PINEAPPLE
 
1 lb. boneless chicken breasts
1/2 c. green pepper, diced
1/4 c. onion, chopped
1/2 c. celery, chopped
1/2 c. bean sprouts, chopped
1 small can chuck pineapple in it's own juice
1 tbsp. ginger, ground

In a large skillet brown chicken. Use about 1/4 cup water instead of oil (it does the same as oil, but without calories). Add the vegetables and allow to simmer. Use more water if necessary. Cook until desired crispness is attained. Now add pineapple and the juice. Sprinkle ginger on top and mix in. Serve with rice. Makes 4 servings.
