CHICKEN FRIED RICE WITH
VEGETABLES
 
4 cooked and cubed chicken breasts
4 cloves garlic, chopped
1/2 c. soy sauce
1 bunch green onions, diced
1/2 c. cooking oil
1 1/4 c. white rice
2 1/2 c. water
1 bag oriental vegetables
3 eggs, beaten

3 to 4 hours before; soak chicken in soy sauce and garlic. In large electric skillet lightly brown onion. Add rice and cook until brown; stirring occasionally. Add chicken and cook 3 to 4 minutes. Add water and vegetables and stir. Mixture will look like soup. Bring to boil; reduce heat and simmer for 20 to 30 minutes. Add eggs and stir through mixture. They will cook from the heat of vegetables.

Add as many different vegetables as you like.
