EASIEST & BEST HOMEMADE ALFREDO
SAUCE
 
This by far is the easiest and best Alfredo sauce recipe I have found yet! I love pasta and Alfredo and searched forever to make it homemade. I think that too many recipes have too many ingredients and that others are too watery. My girlfriend loves it and makes me cook it at least once a week.. plus you can add it to so many different things! This is a great, simple recipe to make for someone coming over for a dinner date ;)

1/2 cup (1 stick) butter
1 (8 oz.) pkg. cream cheese
1 cup half and half
1/3 cup Parmesan cheese
1 tablespoon garlic powder (optional)
pepper, to taste

1. In a medium saucepan, melt butter.

2. Once butter is almost melted, add the package of cream cheese. It's easiest to cut it into 4 pieces so that it melts quicker.

3. Once butter and cream cheese are mixed well together, add the cup of half and half, Parmesan cheese, garlic powder, and then shake pepper on top. Stir all together until well mixed.

4. Once it's mixed well and sauce-like, take it off the burner and set aside so it can thicken up. Stir every few moments.

5. DONE! Pour over your favorite pasta, I love it with tortellini!

Don't forget some bread-sticks to dip in the extra sauce! :)

I made this tonight using 2% milk instead of half and half. I also used a tiny bit extra Parmesan cheese. The recipe really is delicious, but the next time I make it I'll probably only use a teaspoon of garlic. I found myself having to take breaks from eating mine because the garlic was overwhelming.

My recipe is similiar to this one except I use a dash of nutmeg instead of garlic it gives it great flavor. I haven't tried the cream cheese great idea. I use heavy cream instead of half and half to make it little thicker. My son and husband love this sauce.

Based on all the comments I thought this would be great. The cream cheese taste was way too over powering. added broccoli, but it just wasn't very good...would not make again.

Excellent recipe! Was in a hurry at the grocery store and wound up getting a wedge of Romano cheese by mistake. I'm a big fan of cheeses so I probably used more like 1/2 cup, but it still came out great! I used this sauce to top off some linguini and added scallops on top. Served along with loaf French bread quartered and generously endowed with a garlic spread. I would suggest pouring a glass of wine and settling in when making this sauce. Be patient. It takes a minute or two, but is WELL worth the time!

Absolutely delicious. I doubled which made it a little too "cream cheesy" but nothing a little extra parm and garlic didn't fix. Using a whisk to fold the cream cheese and butter made it ultra creamy.

This passed the Italian husband test -- and that's not easy!

I used 1 tablespoon of refrigerated minced garlic, and I added the 1/4 tsp. of nutmeg and 1/2 tsp. of marjoram that someone recommended.

I used 1/2 cup of shredded Parmesan.

I also followed the recommendations and used a whisk. The sauce was very creamy and I did not notice a cream cheese flavor.

By the time the sauce thickened up it wasn't as hot as I would have liked. I think next time I will warm the half and half before I put it in.

Great recipe! I may never buy jar alfredo again ;-).

As for quantity, this was not quite enough sauce for 12 ounces of angel hair pasta. Should work generously for 8 ounces.
