VEGETABLE CASSEROLE | |
1 1/2 c. chopped onion 2 c. celery (cut into 1 inch diagonals) 1 1/2 c. carrots (cut into 1 inch diagonals) 10 oz. frozen green beans 2 c. stewed tomatoes 4 tbsp. butter (cut into chunks) 3 tbsp. minute tapioca 1/4 tsp. salt and pepper Put onion, celery, carrots and green beans into casserole or glass baking dish. Put stewed tomatoes into a pan with tapioca, butter and salt and pepper. Stir over medium low heat until butter melts and tapioca dissolves. (It may be a bit white.) Pour over vegetables. Bake at 350 degrees for 1 1/2 hours. Stir before serving. Makes 8 servings. |
