COTTAGE CHEESE PIE (Schmierkase) 
1 1/2 c. sm. curd cottage cheese
1/2 c. sugar
Pinch salt
1 tbsp. plus 1 tsp. all-purpose flour
2 eggs, well beaten
1 c. milk (use sm. can evaporated milk and fill with 2% milk to equal 1 c.)
1 1/2 tsp. vanilla

Combine cheese, sugar, salt and flour. Mix well by hand. Stir in eggs. Add milk and vanilla. Pour in unbaked pie shell with cinnamon sprinkled on to. Bake at 425 degrees for 10 minutes. Reduce heat to 350 degrees and bake for an additional 35 minutes until silver knife inserted in center comes out clean. The filling will be soft but will thicken.
