COTTAGE CHEESE PIE 
12 oz. Cottage cheese
2 eggs
3/4 c. sugar
1 tbsp. flour
1/4 c. butter
1/4 tsp. salt
1/2 c. milk
1 tsp. vanilla
1/2 tsp. nutmeg

Mash cheese and add other ingredients. Flavor with 1 teaspoon vanilla and 1/2 teaspoon nutmeg. Bake in deep, 9-inch pie crust at 325 degrees for 35 minutes or until knife comes out clean.

Have made cottage cheese pies and ricotta pies many times. Generally, I don't even bother with any kind of crust. Old Italians made their ricotta pies (pizza dolce) that way. This is the best recipe I've found for the cottage cheese pie.
