MEAT LOAF WITH VEGETABLES 
1 1/2 lbs. ground beef
1 (2.8 oz.) can French fried onions
6 sm. redskin potatoes, sliced thin
1 (16 oz.) bag frozen broccoli, corn, red pepper, thawed and drain
1/4 tsp. salt
1 egg
1 (8 oz.) can tomato sauce
1/2 tsp. Italian seasoning

Combine meat, egg, 1/2 can tomato sauce, salt, seasoning and 1/2 can onions. In 9 x 13 inch baking dish form 3 small loaves. Place potatoes around loaves. Bake, covered, at 375 degrees for 35 minutes. Stir vegetables into potatoes. Top loaves with rest of tomato sauce. Bake, uncovered, 5 more minutes.
