2 med. unpeeled, grated zucchini
4 oz. cheddar cheese
1 c. Bisquick
1/2 c. diced onions
2 eggs
Dash salt & pepper
1 c. milk

Mix together the Bisquick, milk, eggs, salt and pepper. Put zucchini, cheese and onion in greased 2 quart casserole. Pour Bisquick mix over top. Bake at 350 degrees for 30 to 40 minutes.
