STUFFED MANICOTTI SHELLS 
1 lb. ricotta cheese
6 oz. Mozzarella cheese, grated
1 1/2 tbsp. Italian seasoning
1 tsp. sugar
1/2 tsp. pepper
1 tsp. salt
1/4 c. chopped green pepper
1/2 c. chopped onion
2/3 c. tomato paste
2 c. water
8-9 manicotti shells, uncooked
1/2 lb. ground chuck
Parmesan cheese

Mix ricotta and Mozzarella cheese together in bowl and set aside. Saute ground chuck, onion and green pepper in pan with a little oil.

Meanwhile in another pan simmer tomato paste, water, salt, pepper, Italian seasoning and sugar. Add meat mixture to sauce and simmer. Stuff shells with cheese mixture. Place in greased casserole dish. Pour sauce over all. Top with Parmesan cheese.

Bake, covered (set on cookie sheet to avoid boiling over) for 25 to 30 minutes at 350 degrees. Great with salad, garlic bread, and wine. NOTE: I usually double the recipe for a family of four. 2 servings.
