STUFFED MANICOTTI SHELLS 
1 pt. low-fat cottage cheese
1/2 lb. shredded Mozzarella
1 egg
1 tbsp. fresh or dry parsley
1/4 c. Romano or Parmesan cheese
1 tsp. garlic salt
Salt & pepper to taste
1 box manicotti shells (cook 5 minutes)
Your own or prepared bottled spaghetti sauce & add 1/2 lb. Italian sweet sausage precooked & broken into sm. pieces with a fork

Boil 4 quarts water. Add manicotti shells, cook until firm-tender. In medium bowl mix together cottage cheese, Mozzarella, Parmesan and Romano cheese, parsley, garlic salt, pepper and salt, then add 1 beaten egg to mix (drain shells on paper towel). Fill each shell 3/4 full, place in Pam sprayed casserole or baking pan.

Add cooked sausage to your sauce then pour over shells, grate more Mozzarella and Parmesan cheese over top. Bake covered for 35 minutes at 350 degrees, uncover and cook 10 minutes more. Serve with toasted bread and green salad.
