CHOCOLATE CHIP OATMEAL COOKIES
OR BARS
 
1 cup (2 sticks) butter
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tbsp. hot water
1 1/2 cups sifted all-purpose flour
1 tsp. baking soda
1 tsp. salt
2 cups oatmeal
12 oz. chocolate chips
1 tsp. vanilla
1/2 to 1 cup chopped nuts (optional)

Preheat oven to 350°F.

Cream butter, add sugar, cream together. Add eggs, hot water, mix together. Add flour, baking soda, salt. Add oatmeal, chocolate chips, vanilla and nuts slowly. Mix well. Drop by spoonful on greased cookie sheet.

Bake at 350°F for 10 to 12 minutes.

For bars put in greased 9x11-inch inch pan. Bake at 350°F for 25 to 30 minutes. Reserve 1/2 cup chocolate chips. Put on top while still hot. After melted, spread.

I had a 9 1/2 x 13 pan, but it took about 30 minutes. I added chopped nuts and cranberries and put 3/4 c. choc chip on top. Anyhow, it is delicious. Thanks for this great recipe!

These are very good. I made a batch without nuts and rather than reserving chips until after cooking I sprinkled them on the top before cooking and pressed them down a little. This made the bar cookies look nice when done as there were obvious chips on the top. They took about 30 minutes to cook in my oven. They're soft and chewy but the oatmeal gives a little bit of crunch. Unlike a lot of cookies, they are not overly sweet; just about right (although next time I make them I might decrease each of the sugars by about 10%. Good recipe and easier to make the bar cookies than regular cookies. Thanks for sharing/posting this recipe.

Excellent. I usually do the bar cookies, but since I'm lazy, I just mix all the chocolate chips in at once. I also really like adding dried cranberries instead of the nuts. A favorite!

So yummy! Though, I think I didn't wait long enough to add my chocolate chips... they melted right in! So my mix was more chocolate instead of having distinguishable chocolate chips... Though, these bars were a hit regardless! YUMMY! Did I say I was starting my diet today? I meant tomorrow. (;

Awesome recipe! Guests/family loved these cookies and were wanting more! This is better than your traditional chocolate chip recipe, way better! I may experiment a little next time and add some finely chopped coconut or perhaps dried cranberries. This recipe is a keeper. :o)

This recipe is delicious!!! I made them as bars and they were quick, easy, and came out perfectly!! I added about a 1/2 tsp. of cinnamon and put all the chocolate chips in the batter instead of spreading some on top. Don't worry when they cons out super soft-like cookies they will hold together (while staying chewy) as they cool. My husband is in awe of these and asking about every ingredient :) These will become a staple in my house. Thank you for sharing!!!

I didn't read well, so I baked the bars in an 8x8. They're very thick and wonderful but it did take about an hour to cook them.
So moist and flavorful! I had just under the right amount of butter, so these probably have about a tbsp. of canola oil and I always add cinnamon to my cookies, but those changes aren't big enough that I can't say YUM to this recipe. Thank you!

I just cannot say enough good things about this recipe! My husband and 2 boys ate these cookies in seconds! I used the recipe for bar cookies and thought it was a much easier way to make cookies. They were very moist, light and the perfect amount of ingredients. I have used the upscale dept. store recipe (NM) for years and have decided that this one is a DEFINITE switch!
