FRUIT COCKTAIL CAKE II | |
2 c. flour 1 1/2 c. sugar 2 tsp. baking soda 1 1/4 tsp. salt 1 (16 oz.) can fruit cocktail with juice (2 c.) 1 tsp. vanilla 2 eggs 1. Preheat oven to 350 degrees. Grease and flour a 13x9x2 inch cake pan. 2. In a large bowl, with a wooden spoon, mix all ingredients together until batter is smooth. 3. Pour batter into cake pan and bake 35-40 minutes. 4. While cake is cooking prepare icing. ICING: 1 stick butter 1 sm. can evaporated milk (2/3 c.) 2/3 c. sugar 1/2 tsp. vanilla 1 c. coconut 1 c. chopped walnuts 1. In a saucepan over medium heat combine butter, evaporated milk and vanilla. 2. Slowly stir in sugar. 3. Add coconut and walnuts. 4. Cook until thick, stirring constantly about 20 minutes. 5. Ice while cake is still warm. |
