ZUCCHINI AU GRATIN | |
2 med. zucchini 2 tbsp. butter 1/4 c. bread crumbs 1/2 c. mushroom soup, undiluted 1/3 c. cheddar cheese, shredded 1 tbsp. minced onion Salt & pepper to taste Cut zucchini lengthwise and into slices 1//4 inch thick. Melt 1 tablespoon butter in skillet. Stir in bread crumbs. Toss and set aside. Melt remaining butter and saute zucchini 3 to 5 minutes. Add other ingredients to skillet and heat until cheese is melted. Top with bread crumbs. |
