ZUCCHINI AND TOMATOES AU GRATIN 
2 lb. zucchini
3 tbsp. chopped onion
3 tbsp. fat (cooking oil)
2 c. stewed tomatoes
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. grated cheese

Wash zucchini and cut into 1/4 inch pieces. Cook onion in fat. Add zucchini and cook slowly 5 minutes, stirring frequently. Add tomatoes, salt and pepper. Cover and cook 5 minutes longer. Turn into greased baking dish. Sprinkle cheese over top and bake in moderate oven (375 degrees) about 20 minutes. (Serves 6-8.)
