ZUCCHINI AU GRATIN 
1 1/2 lbs. zucchini, 1/2 inch slices
1 onion, sliced
1 c. boiling water
1/2 tsp. salt
2 c. grated Cheddar
1/2 c. evaporated milk
1/4 c. drained vegetable liquid
1/4 tsp. salt and pepper
3/4 c. buttered bread crumbs

Cook with onion - drain - save liquid. Alternate zucchini with cheese. Add liquid, milk, top with bread crumbs. Bake uncovered 30 minutes.
