STUFFED ZUCCHINI AU GRATIN 
4 zucchini squash
3/4 c. Cheddar cheese, grated
1/2 c. green onions, diced
Salt (to taste)
Pepper (to taste)

Cook zucchini in boiling water until tender (about 20 minutes). Drain and cut in half lengthwise. Scoop out centers and put shells in casserole. In mixing bowl, mix centers with cheese (1/2 cup), onion and salt and pepper. Refill shells and cover with remaining 1/4 cup cheese. Bake in 350 degree oven for 20 minutes, or until cheese is melted. Serves 8.
