QUICHE 
assorted vegetables (zucchini, squash, mushrooms, bell pepper, onion, tomato, broccoli, etc.)
2 deep-dish pie shells
8 to 10 eggs (may use egg substitute)
2 c. milk
1 pkg. chopped spinach
1 pkg. Cheddar cheese
1/2 tsp. garlic salt, basil and celery salt

Chop vegetables, then sauté until tender. In large bowl, whip eggs and milk. Add spinach, cheese and sautéed vegetables to milk/egg mixture. Pour mixture into pie shells.

Bake at 375°F for 45 minutes or until knife comes out clean when stuck into the middle of the quiche.
