CHEESEBURGER QUICHE | |
1 ready-made 9" pie crust 1/2 lb ground beef or turkey breast 1 small onion, chopped 1/4 tsp each of salt and pepper 1/3 cup catsup 1/2 cup dill pickles 6 eggs, beaten 2/3 cup 1% milk 1-1/4 cups shredded reduced-fat cheddar cheese 1 lg tomato, cut into 1/4" slices. Preheat oven to 375°F. Fit dough into pie pan, flute edges, refrigerate. Spray a large skillet with cooking spray, put over medium heat, add beef or turkey, onions, salt and pepper. Cook, stirring occasionally, until meat is browned and onions are soft. Stir in catsup. Spread mix into crust. Chop 1/4 cup pickles. In a bowl, combine eggs, milk, 1 cup cheese, and pickles. Pour over meat mix. Top with tomato slices and remaining pickle slices. Bake for 25 minutes. Sprinkle with remaining cheese and bake for 5 minutes. My granddaughter loves this.
