AUNT JANE'S PEANUT BRITTLE | |
1 c. light corn syrup 1 c. granulated sugar 1 tbsp. butter (DO NOT SUBSTITUTE) 1/2 tsp. salt 1 1/2 c. raw jumbo peanuts 1 tsp. baking soda Combine first 4 ingredients. Cook over medium heat until sugar dissolves and comes to a boil. Add peanuts; stir constantly until peanuts become light brown. This takes about 10-15 minutes (I use a wooden spoon for stirring). Remove from stove. Quickly stir in 1 teaspoon baking soda and spread thinly on buttered cookie sheet or large platter. Cool thoroughly before handling. HINT: I generously butter cookie sheet or large platter before I start cooking. Also, have baking soda measured, ready to dump into mixture. Let cool completely before breaking up. |
