CHEESE TORTELLINI IN TOMATO
CREAM SAUCE
 
Cheese tortellini to serve 4, cooked & drained
1/2 c. sliced green pepper
1/2 c. sliced onion
1/2 c. sliced celery
2 fresh tomatoes, diced
1/2 c. sliced mushrooms
1 c. diced ham
1 c. tomato sauce
1/2 c. heavy cream
1 c. chicken broth
2 tbsp. butter
Parmesan cheese, preferably grated fresh

In large skillet saute green pepper, onion, celery and mushroom until just cooked. Add ham and heat through. Stir in tomato sauce, tomato chunks and 1/2 of the chicken broth.

Mix well and simmer on low heat. Warm remaining chicken broth (not too hot) and mix with the cream. Add to skillet; mix well. Simmer for another minute to thicken. Add butter just before serving.

In large bowl, place the tortellini, pour sauce over and mix gently as not to break pasta. Sprinkle Parmesan on top.

At first I doubted this reciepe. I am not the best cook, my boyfriend is the better cook. I prepared this form him, but used italian sausage, oh my it was great! When he cleans his plate, I know I did well. U can double up on the mushrooms and add more meat If u want. I added about half teaspoon of salt. This was so easy and quick!

What a WONDERFUL recipe! Easy to follow and so glad I found it! We just happened to have had a nice ham the night before. This was a perfect dinner. My Italian husband gave it an 11 out of 10. One of the best dinners I've made in a long time and it looked FANTASTIC as well.
