“BEST EVER MEATLOAF” IS IN:

BEST EVER MEATLOAF 
2 eggs
2/3 cup milk
3 slices bread
1/2 cup chopped onion
4 oz. shredded cheese
1 tsp. salt
1/4 tsp. black pepper
1 1/2 lb. lean ground beef

TOPPING:

1/2 cup tomato sauce
1/2 cup brown sugar
1 tsp. mustard

Beat eggs. Add milk and bread and let stand until bread absorbs liquid. Stir in onion and cheese. Add ground beef. Mix well. Shape into a loaf.

Bake at 350°F for 45 minutes. Combine topping and spoon over meatloaf after about 30 minutes. Spoon topping over meatloaf every 10 to 15 minutes while meatloaf is cooking.

Yummy, yummy meatloaf. Very moist and flavorful. I dont know if it made a difference but I cooked mine in a loaf pan and it took almost 2 hours. I didnt have any tomato sauce so I substituted it with ketchup and added a little red pepper flakes to the sauce. I will use this recipe from now on when I make meatloaf!!

Meatloaf=a beginner's dish, right? Wrong. Until I found this recipe!
Like a couple of others, I found it took 45 minutes to cook. Then I added mixture.
Now the recipe is enhanced with sunflower seed bread, sliced green pimiento-stuffed olives, and with onion, red green bell pepper. I also make a whole can of tomato sauce with a whole can of fire roasted tomatoes. With that I mix in two tablespoons of Tony Chacheré roux mix and season with his Cajun Seasoning. Have to make extra for my husband's sandwiches.

I substituted ground turkey. Next time I will try using 2 slices of bread instead of 3 as the consistency was a bit mushy with the turkey meat but the flavor was good. I thought the sauce was delicious and I will use the sauce mixture idea again.

I really liked this recipe, not just because it was yummy but because it was also very easy. I added 3 cloves of garlic chopped up to the meatloaf, and for the sauce topping I added a piece of chile in adobo sauce which gave it a nice kick, and a piece of roaster red pepper. DELISH!

Fantastic recipe. I substituted for lactose free milk and ommitted the cheese b/c my mom is lactose intolorent. Came out great! The sauce is great and the meatloaf is moist. Thank you Lisa.

Very good meatloaf! I am not a chef and loved that this was simple and easy to prepare. The only thing I noticed was that it took a lot longer in the oven to get done. Well worth the wait though!
