FILLET OF BEEF 
1 oven ready beef fillet (approx. 4 1/2 lb.) wrapped in fat
1 garlic clove, peeled & cut into thin slivers
Salt & freshly ground pepper to taste

1. Preheat oven to 425 degrees.

2. With the tip of a sharp knife, cut slits in the meat and insert slivers of garlic. Season meat with salt and pepper.

3. Place meat in a shallow roasting pan, just large enough to hold the meat comfortably.

4. Bake for 10 minutes. Reduce heat to 350 degrees and bake for another 25 minutes for rare meat (120 on meat thermometer); 35 minutes for medium meat (130 on meat thermometer).

5. Remove meat from oven and let stand for 10 minutes before slicing. Serves 8-10.
