BLACK BOTTOM CUPCAKES 
8 oz. cream cheese
1 egg
1/3 c. sugar
1/8 tsp. salt
12 oz. mini chocolate chips
1 1/2 c. flour
1 c. sugar
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/3 c. oil
1 tsp. vanilla

In small bowl mix cream cheese, egg, sugar, salt. Mix in chocolate chips and set aside. Mix remaining dry ingredients, then add in water, oil and vanilla. Put small Christmas muffin papers on cookie sheet, fill 1/3 full of chocolate mixture, add a drop of cream cheese mixture on top. Bake until cream cheese is light golden brown, about 15 to 18 minutes in 350 degree oven.
