BROCCOLI AND RICE CASSEROLE 
1 stick butter
1 sm. onion, chopped
1 c. milk
2 c. Minute Rice (uncooked)
2 boxes frozen chopped broccoli (thawed and drained)
1 (6 oz.) jar Cheez Whiz
1 can cream of chicken soup

Preheat oven to 350 degrees.

Melt butter and brown onions until they are transparent. Set aside. Soften cheese in microwave (for better mixing).

Place broccoli in large mixing bowl. Add milk, soup and cheese. Add onion. Add dry rice and mix thoroughly. Bake in a 9x12 pan for 30-45 minutes.

Hint: You don't want casserole too dry, should be bubbly and a little brown on top when you remove from oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
