SWEET AND SOUR RED CABBAGE 
3 to 4 lbs. red cabbage
1 tart apple
4 tbsp. butter
1 tbsp. brown sugar
1 c. minced onion
6 tsp. wine vinegar
1 c. water
1 tsp. salt

Wash, dry, and shred cabbage. Chop the apple. Melt the butter in a large frying pan and stir in the brown sugar. Add the apple and the onions; cover and cook low for 5 minutes until tender. Stir in cabbage; add the vinegar. Cover and braise for 10 minutes. Pour in water and salt. Cook, covered, over low heat for 2 hours (or bake in a preheated 300 degree oven for 2 1/2 hours).
