PUMPKIN BREAD (2 LOAVES) 
4 eggs
2 c. sugar
1 1/4 c. oil
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
2 c. cooked/pureed pumpkin
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease 2 loaf pans. In large mixing bowl, beat eggs well. Add sugar and oil, beating after each addition. Mix flour, salt, baking soda and cinnamon in large bowl. Fold into liquid mixture.

Add pumpkin to batter and mix well. Stir in nuts. Divide batter and pour into pans. Bake for 1 hour. Test if done, with a toothpick. When somewhat cool, remove loaves from pans and finish cooling on racks. Bread may be frozen for future use.
