PASTA SALAD WITH BLEU CHEESE &
BROCCOLI
 
Sm. head of broccoli, cut into bite-sized pieces and lightly steamed
12 oz. pkg. multicolored pasta, rotini preferred
3/4 c. chopped green onions
3 oz. bleu cheese, crumbled
Salt and pepper, to taste
1/4 tsp. garlic powder
3 tbsp. lemon juice
1 c. mayonnaise

Cook pasta and drain. Combine hot pasta with crumbled bleu cheese, onion, salt and pepper, and garlic powder. Add broccoli. Mix together lemon juice and mayonnaise until smooth. Combine pasta and mayonnaise until evenly mixed. Refrigerate covered several hours or overnight. Add more mayonnaise if desired, before serving.
