CREAM CHEESE TARTS 
1 (16 oz.) cream cheese
1 box vanilla wafers
2/3 c. sugar
3 eggs
2 tsp. vanilla
Foil cupcake papers
1 can pie filling

Cream sugar and cream cheese. Add vanilla and eggs and beat until smooth and creamy. Place vanilla wafer inside each cupcake paper. Spoon on 1 well-rounded tablespoon of mixture. Bake 20 minutes at 325 degrees. Let cool and top each tart with pie filling. Makes approximately 2 dozen.
